An Introduction
The Kalita Wave is an extremely popular pour over method the world over. Made by a family-owned business in Japan, the flat base and small holes of this pour over dripper let the coffee collect and slowly pass into the cup, allowing for an even extraction every time. While it is often compared to other pour over methods, the Kalita Wave really does provide a unique flavor profile in each cup of coffee. Available in models of various materials, the most iconic being stainless steel.

While the meticulous recipes used at coffee shops are incredible and in my opinion bring out the absolute best flavors from every bean and roast, and are my favorite way to drink coffee, when I’m at home making my own daily cup(s), I prefer the easy way and leave the rest to the pros at my favorite coffee shops.

What you’ll Need:
Kalita Wave
Kalita Wave paper filters
Whole coffee beans
Coffee grinder
Gooseneck kettle
Filtered water
Coffee mug
Instructions
Step 1
Boil 2.5 cups of filtered water. While you’re waiting, grind a single scoop of coffee beans (approximately 3 tbsp) to a medium-fine level of coarseness.
Step 2
Mount the Kalita Wave on your coffee mug, or a carafe if you have one, and unfold the Kalita Wave paper filter. While holding down the top edge of the filter, lightly wet the bottom center of the filter first so it sits properly, then wet the rest of the filter to remove the paper taste. Dump the water afterwards.
Step 3
Place the coffee grounds into the middle of the Kalita Wave, shake it to level the grounds, and create a small well in the middle of the grounds. This helps achieve the bloom upon first pour.
Step 4
Using the gooseneck kettle, slowly pour water first into the well, and slowly in an expanding circle around it until just the coffee is wet, avoiding direct water contact with the paper if possible. Wait 30 seconds while the coffee blooms.
Step 5
Slowly pour more water in circles over the grounds, this time allowing the water to rise higher than the top level of coffee but still not pouring water directly on the paper, until the Kalita Wave is above 3/4 full. Allow the water to filter through.
Step 6
Repeat the previous step one more time. Remove the paper filter full of grounds and throw away, as well as quickly rinse the Kalita Wave and allow to dry.
